Chilli Peanut Noodles with Sambal Belacan

Spicy, nutty, umami-packed comfort in under 20 minutes

If you’re craving something bold but easy, this chilli peanut noodles recipe hits every note — creamy, spicy, savoury, and just a little addictive. The star? Sambal belacan — bringing that deep, punchy umami that takes your usual peanut noodles to the next level.

🛒 Ingredients (Serves 2)

For the noodles:

  • 200g noodles (egg noodles, ramen, or spaghetti works)
  • 1 tbsp oil
  • 2 cloves garlic, minced

For the sauce:

  • 2 tbsp peanut butter (smooth or chunky)
  • 1–2 tbsp sambal belacan (adjust to spice level)
  • 1 tbsp soy sauce
  • 1 tsp dark soy sauce (optional, for colour)
  • 1 tbsp honey or brown sugar
  • 1–2 tbsp lime juice
  • 3–5 tbsp warm water (to loosen sauce)

Optional toppings:

  • Crushed peanuts
  • Spring onions
  • Fried egg or soft-boiled egg
  • Grilled chicken, prawns, or tofu
  • Cucumber or shredded carrots (for crunch)

👩🍳 Instructions

1. Cook the noodles
Boil your noodles according to package instructions. Drain and set aside.

2. Make the sauce
In a bowl, mix peanut butter, sambal belacan, soy sauce, honey, and lime juice.
Gradually add warm water until the sauce becomes smooth and silky (not too thick).

3. Build the base
Heat oil in a pan over medium heat. Add minced garlic and sauté until fragrant (about 30 seconds).

4. Toss everything together
Add cooked noodles into the pan. Pour in the sauce and toss well until every strand is coated.

5. Taste & adjust
Add more sambal for heat, lime for brightness, or a splash of water if needed.

6. Serve
Plate your noodles and top with crushed peanuts, spring onions, and your choice of protein.

🔥 Pro Tips

  • Control the heat: Start with 1 tbsp sambal belacan and build up — it’s bold.
  • Extra creamy: Add a splash of coconut milk for a richer sauce.
  • Meal prep hack: The sauce can be made in advance and stored for up to 3 days.

💡 Why Sambal Belacan?

It’s not just spicy — it adds a deep, fermented umami that plain chilli can’t match. Combined with peanut butter, it creates a rich, layered flavour that tastes like something you’d order out… but made at home.
