Creamy Shin Carbonara with Sambal Bawang

Creamy Shin Carbonara with Sambal Bawang

If you love creamy pasta and spicy instant noodles, this recipe combines both into one comforting bowl. Rich carbonara-style sauce, gooey cheese, savoury ham, silky egg yolk, and the signature Shin Ramyun spice packets come together with our Sambal Bawang for a creamy-spicy noodle bowl that feels way more indulgent than a simple instant meal.

The best part? The Shin Ramyun seasoning already gives the noodles a deep spicy umami base, while the Sambal Bawang adds extra savoury heat and crispy fried shallot flavour that takes everything to another level.

Ingredients

  • 1 pack Shin Ramyun
  • Shin Ramyun seasoning packets
  • 2–3 cloves garlic, minced
  • 2 slices ham, chopped
  • 1 egg yolk
  • 1–2 slices cheese
  • 1–2 tablespoons Sambal Bawang
  • Spring onions, chopped
  • A little ramen water (reserved from cooking)

Instructions

1. Cook the noodles

Boil the Shin Ramyun noodles according to the packet, but slightly undercook them so they stay chewy later. Add the Shin Ramyun seasoning packets while boiling the noodles.

Reserve some of the ramen water before draining most of it away. Leave a small amount behind for the sauce.

2. Sauté the garlic and ham

In a separate pan, sauté the minced garlic until fragrant. Add the chopped ham and cook until slightly browned around the edges.

3. Create the creamy sauce

Lower the heat and add the cheese into the pan. Pour in a little reserved ramen water and stir until the cheese melts into a creamy sauce.

4. Combine everything

Add the cooked noodles into the pan and toss everything together until fully coated.

5. Add the egg yolk

Turn the heat to low before adding the egg yolk. Mix quickly so the sauce becomes silky and creamy without scrambling the egg.

6. Finish with Sambal Bawang

Add Sambal Bawang and mix through evenly. The spicy fried shallot flavour works perfectly with the creamy noodles and Shin Ramyun broth seasoning.

7. Garnish and serve

Top with chopped spring onions and another spoon of Sambal Bawang for extra flavour and heat.

Why This Combination Works

Shin Ramyun already has a strong spicy and savoury flavour profile, but turning it into a creamy carbonara-style dish softens the heat while making it richer and more comforting.

The Sambal Bawang helps balance the creaminess with savoury chilli heat and crispy shallot aroma, giving the noodles more texture and depth instead of tasting overly heavy.

It’s quick, comforting, spicy, creamy, and dangerously addictive.
