Nasi Goreng Kampung with Sambal Matah
There's something comforting about a plate of Nasi Goreng Kampung. It's simple, satisfying, and packed with savoury flavours that make it a staple across Indonesia and Malaysia.
In this version, we're giving the traditional dish a fresh twist with our Sambal Matah. Made with aromatic shallots, chillies, and fragrant herbs, it adds brightness, gentle heat, and layers of flavour that elevate every spoonful.

Ingredients (2 servings)
- 2 bowls cooked rice (preferably chilled overnight)
- 2 tbsp Nusantara Sambal Matah
- 3 cloves garlic, minced
- 4 shallots, thinly sliced
- 2 eggs
- 100g chicken thigh, diced
- 4-5 prawns, peeled (optional)
- A handful of kangkung or spinach
- 1 tbsp sweet soy sauce (kecap manis)
- 1 tsp light soy sauce
- Salt and pepper to taste
- 2 tbsp cooking oil

- Fried egg
- Crispy fried shallots
- Cucumber slices
- Tomato wedges
- Prawn crackers
- Lime wedges
Instructions
1. Cook the protein
Heat the cooking oil in a wok or frying pan over medium-high heat. Add the diced chicken and prawns, then cook until fully done.
2. Build the aromatics
Add the minced garlic and sliced shallots. Stir-fry until fragrant and lightly golden.
3. Scramble the eggs
Push everything to one side of the pan. Crack in the eggs and scramble until just cooked before mixing them with the chicken and aromatics.
4. Add the Sambal Matah
Stir in the Sambal Matah and cook for about a minute, allowing the aromatics and chilli to release their fragrance.
5. Fry the rice
Add the cooked rice and break up any clumps. Toss everything together until the rice is evenly coated.
6. Season
Add the sweet soy sauce, light soy sauce, salt, and pepper. Stir-fry over high heat until the rice is hot and slightly smoky.
7. Add the greens
Fold in the kangkung or spinach and cook for another minute until just wilted.
8. Serve
Transfer to serving plates and top with a fried egg, crispy shallots, cucumber, tomatoes, crackers, and a squeeze of fresh lime if desired.
Tips
- Cold, day-old rice produces the best texture for fried rice.
- Cook over high heat to achieve the signature smoky flavour.
- Adjust the amount of Sambal Matah depending on your preferred spice level.
- Add anchovies (ikan bilis) for an even more traditional kampung-style fried rice.
