Sambal Cumi Cheese Toast
This isn’t your usual garlic bread.
We start by air-frying fresh garlic until soft and aromatic, mash it into butter with herbs and our bold sambal cumi, then spread it onto bread, top with cheese, and finish in the oven.
The result? Crispy toast, melted cheese, and a deep, spicy umami kick from the sambal.
Ingredients (Serves 2)
- 2 slices of bread (sourdough, brioche, or thick white bread)
- 2 tbsp butter (softened)
- 2–3 cloves fresh garlic
- 2–3 tbsp Sambal Cumi
- ½ cup shredded mozzarella or cheddar cheese
- A pinch of salt
- A pinch of black pepper
- A pinch of dried oregano
Instructions
1. Roast the garlic (air fryer)
Place whole or lightly crushed garlic cloves into the air fryer.
Air fry at 190°C for 30 minutes until soft, fragrant, and lightly golden.
2. Make the sambal garlic butter
Mash the roasted garlic into softened butter.
Add:
- Salt
- Black pepper
- Oregano
- Sambal cumi
Mix into a smooth, flavourful spread.
3. Assemble the toast
Spread the sambal garlic butter generously over each slice of bread.
Top with shredded cheese immediately after.
4. Bake (final step)
Place in oven at until the cheese is melted and bubbly and the edges are crisp.
5. Serve
Serve hot while the cheese is stretchy and the toast is golden.

Roasting the garlic first brings out a sweet, mellow depth that blends perfectly into the butter.
Mixing it with sambal cumi creates a bold, umami-rich base, while baking everything together allows the flavours to infuse into the bread. The melted cheese ties it all together into a rich, satisfying bite.
