Instructions

Soak the bee hoon in warm water for about 5–7 minutes until soft. Drain and set aside.

2. Fry the Aromatics

Heat oil in a pan over medium heat. Add the sliced onions and minced garlic, then sauté until fragrant and slightly golden.

3. Add the Sambal Matah

Add the sambal matah to the pan and stir for about 30 seconds. The heat will release the fragrance of the chillies, shallots, and lemongrass.

4. Cook the Bee Hoon

Add the softened bee hoon into the pan. Toss well to coat the noodles with the sambal and aromatics.

Add soy sauce and season lightly with salt if needed. Stir-fry for another 1–2 minutes until everything is well combined.

5. Plate the Dish

Serve the sambal matah bee hoon with hard-boiled eggs and a bowl of steamed rice. Add an extra spoon of sambal matah on top for even more flavour.
