Sambal Udang Mac & Cheese

Ingredients

- 160g macaroni
- 1 tbsp butter
- 1 tbsp plain flour
- 250ml milk
- 100g shredded cheddar cheese
- 1–2 tbsp Nusantara Sambal Udang
- Salt and black pepper, to taste
- Spring onions, optional
- Extra cheese, optional
Method
1. Cook the macaroni
Cook the macaroni according to the package instructions until al dente. Drain and set aside.
2. Make the sauce
Melt the butter in a saucepan over medium-low heat. Stir in the flour and cook for about 1 minute.
Slowly add the milk while stirring until the sauce is smooth and begins to thicken.
3. Make it cheesy
Reduce the heat and stir in the cheddar until melted and creamy. Season with a little salt and black pepper.
4. Add the Sambal Udang
Stir in 1 tablespoon of Sambal Udang. Add another spoonful if you prefer a stronger sambal flavour and more heat.
5. Toss everything together
Add the cooked macaroni and stir until well coated in the creamy sambal cheese sauce.
Top with spring onions, extra cheese or even another spoonful of Sambal Udang before serving.
Make It Your Own
