Spicy Prawn Tostada with Sambal Udang

Ingredients

For the prawns

  • 250g large prawns, butterflied
  • 1 tbsp Spicy Dry Seasoning (or however much to your liking)
  • 1 tbsp paprika
  • ½ tsp ground cumin
  • salt and pepper
  • 1 tbsp vegetable oil

 

For the tostada

  • 2 tostada shells
  • lettuce leaves
  • ½ red onion, thinly sliced
  • ½ carrot, thinly sliced
  • ½ green paprika, sliced
  • ½ red paprika, sliced

 

For the dressing

  • 1 tbsp mayonnaise
  • 1 tbsp mustard
  • 1 tbsp tar tar sauce

 

For the vegetables

  • 1–2 tbsp Sambal Udang


Instructions

1. Prepare the prawns

Butterfly the prawns by slicing along the back so they open slightly. Season with Spicy Dry Seasoning, paprika, cumin, salt, and pepper.

2. Cook the prawns

Heat vegetable oil in a pan over medium heat. Pan-sear the prawns until they turn pink and slightly caramelised, about 1–2 minutes per side. Remove from the pan and set aside.

3. Sear the vegetables with sambal

Using the same pan, add the sliced paprika and carrot. Stir-fry briefly, then add Sambal Udang and toss the vegetables so they are lightly coated and fragrant.

4. Make the dressing

In a small bowl, mix mayonnaise, mustard, vinegar, lemon zest, salt, and pepper until smooth.

5. Assemble the tostada

Place lettuce leaves on the tostada shells. Add the sliced onions and the sambal-seared vegetables, then top with the cooked prawns.

6. Finish and serve

Drizzle with the dressing and serve immediately while the tostada is still crispy.
